Garlic Cheese Log

  • ½ to ¾ pounds rat cheese (inexpensive domestic cheddar cheese)
  • 8 ounces cream cheese, softened
  • 1 pound Velveeta
  • 3 cloves garlic, crushed or finely chopped
  • ½ cup ground pecans, finely chopped
  • 2 to 3 drops liquid smoke
  • 2½ - 3 fresh jalapeño peppers, remove seeds and chop finely
  • chili powder, for dusting the outside of the log


Mix all ingredients, except chili powder, together, then roll it into a log. Add chili powder to the outside of the log. Enclose it in wax paper and foil, and twist the ends together. Refrigerate for several days before you enjoy on crackers, a sandwich, or celery.
