Air Fryer Crispy Zucchini Fries

- ½ cup all-purpose flour
- Kosher salt
- freshly ground black pepper
- 2 eggs
- ½ cup panko bread crumbs
- ¼ cup freshly grated Parmesan cheese
- ½ teaspoon smoked paprika (optional)
- 2 zucchini, cut into ½-inch-thick, 4-inch-long slices
- oil, for spraying
In a shallow dish, whisk together flour and a large pinch each of salt and pepper. In a second shallow dish, beat together one whole egg and yolk of second egg. Discard extra egg white. In a third shallow dish, whisk together breadcrumbs, Parmesan cheese, paprika (if desired), and a large pinch each of salt and pepper. Dredge zucchini in flour mixture, then dip in beaten egg, and then dredge in breadcrumb mixture.
Working in batches, spray zucchini on both sides with oil and place in air fryer basket in a single layer. Set temperature to 400 degrees, and air fry for 5 minutes. Turn zucchini, spray with oil, and air fry for 5 minutes more. Repeat with remaining zucchini.
