- cubed watermelon, cubed
- 1 cup water
- 2/3 cup sugar
- 2 tablespoons lemon juice
- 1 handful ice, plus more for serving
- 1 sprig fresh mint, for garnish
In a small saucepan, mix water and sugar and bring to a simmer over medium heat. Cook until sugar completely dissolves. Remove from heat and let cool.
In a blender, puree the watermelon, sugar syrup, lemon juice and ice until smooth. Pour over ice in pretty glasses; garnish with mint and watermelon wedges. Can be served with vodka as an adult beverage!
