Summer Smashed Dates

Ingredients

  • 12 Medjool dates, pitted
  • ½ cup peanut butter or almond butter
  • ½ cup semi-sweet chocolate chips
  • flaked sea salt, to taste
  • choice of chopped nuts (pistachios, pecans, or almonds)

Directions

Slice the dates lengthwise to create an opening for filling.

Place the sliced dates cut-side up between two pieces of parchment paper on a clean surface. Using the bottom of a glass, gently press down on each date to flatten them slightly for an even filling surface.

Remove the top layer of parchment and fill each flattened date with peanut butter or almond butter using a small spoon or knife.

In a microwave-safe bowl, add the semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Drizzle the chocolate over the dates. While the chocolate is still melted, sprinkle with flaked sea salt and your choice of chopped nuts.

Place the baking sheet in the refrigerator or freezer for about 30 minutes, or until the chocolate has hardened.
