Smoked Chicken Breast Salad with Homemade Honey Mustard Dressing

Ingredients
Smoked Chicken Breast Salad
- 2 bone-in chicken breasts with rib meat
- Kosher salt, to taste
- coarsely ground black pepper, to taste
- homemade honey mustard sauce, recipe follows
- arugula
- heirloom tomatoes roughly chopped
Homemade Honey Mustard Dressing
- 1 cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon yellow mustard
- 1 tablespoon orange juice
- pinch of sugar
- Sriracha sauce, to taste, optional
- pinch of paprika, optional
Directions
Smoked Chicken Breast Salad
Season chicken thighs with salt & pepper to taste. Smoke on a pellet grill at 250˚F for about 2 hours until the internal temperature reaches 165˚F. Cut into bite-size pieces, removing the bones.
Sprinkle heirloom tomatoes with salt.
Pour desired amount of honey mustard over chicken, tossing to coat. Put dressed chicken on top of arugula and top with tomatoes.
Homemade Honey Mustard Dressing
Mix all ingredients together in a bowl.
