Potato Salad with Beans & Peas

Servings: 6 to 8


  • 1 bag of small potatoes, halved
  • 1 cup mayonnaise, plus more to taste (or half mayonnaise, half sour cream)
  • salt, to taste
  • black pepper , to taste
  • Paula Deen House Seasoning, to taste
  • 1 can peas, drained
  • 1 can green beans, drained
  • 1 can broad beans, drained
  • ½ onion, chopped
  • 3 hard-boiled eggs, chopped
  • 2 tablespoons chopped parsley


Boil the potatoes in salted water until just tender.

In a large bowl, mix the mayonnaise with the salt, pepper, and house seasoning, to taste. Fold in the rest of the ingredients, until well combined.
