Fried Pepper Patties

Ingredients

  • 1 large can whole green chilies
  • 2 eggs
  • 1 to 2 packages saltine crackers, crushed, or 1 cup Panko or Italian bread crumbs
  • 2 cups grated mild cheddar cheese or Monterrey Jack cheese
  • ¼ to ½ cup oil, for frying

Directions

Heat oil in skillet.

Drain, rinse seeds out, and chop up chiles.

In a large bowl, mix together chilis, eggs, cracker crumbs, and cheese. It should be a consistency that easily makes patties. If it’s too thick, add a few tablespoons of milk. It will be sticky.

Form into patties the size of your palm.

Mix together, you are looking for the consistence to make patties. If it to thick at a few tablespoons of milk. It will be sticky.

Form into patties about the size of you palm.

Place patties in skillet and fry until golden brown with browned edges. Turn over and cook the other side.

Drain fried pepper patties on paper towels to soak up excess oil.
