- Servings: 1 (10-inch) pancake
- 1/2 cup butter
- 3/4 cup whole milk
- 3 large eggs
- 3/4 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon lemon zest
- Garnish: confectioners sugar
Preheat oven to 450°. Place butter in a 10-inch cast-iron skillet, and place skillet in oven to melt butter.
In the container of a blender, process milk and eggs until smooth.
Add flour, granulated sugar, and zest; process until smooth. Pour batter into melted butter in hot skillet.
Bake until golden brown and set, 12 to 15 minutes. Serve immediately; garnish with confectioners’ sugar, if desired.
