Air Fryer Sweet Potato and Bacon Tater Tots

- 1 large sweet potatoes
- 2 slices bacon, cooked and crumbled
- 3½ tablespoons all-purpose flour
- ½ teaspoon salt
- oil, for spraying
In a pot, boil sweet potatoes until partially done, about 15 minutes. Drain and let cool. When cool, using a box grater, shred potatoes. Squeeze potatoes in paper towels to remove all moisture—the most important step to prepare a perfect tater tot.
In a medium bowl, combine potatoes, bacon, flour, and salt; mix well. Form 1 tablespoon of the potato mixture into one tater tot. Repeat with remaining potato mixture.
Working in batches of 6, spray tater tots with oil and place in air fryer basket. Set temperature to 400 degrees, and air fry for 12 minutes. Turn and spray with oil halfway through cooking. Repeat with remaining tots and serve warm.
