Horiatiki (Authentic Greek Salad)

Ingredients
- 1 medium red onion, thinly sliced
- 2 large tomatoes, cut into wedges
- 1 English cucumber, sliced into half-moons
- 1 green bell pepper, sliced
- 1 cup kalamata olives, pitted
- ½ cup pepperoncini, whole
- 1 tablespoon dried oregano
- salt, to taste
- ¼ cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 8 ounces feta cheese blocks, crumbled or cut into large blocks
Directions
In a large salad bowl, combine the sliced red onion, tomato wedges, cucumber slices, and
green bell pepper.
Gently fold in the Kalamata olives and pepperoncini into the vegetable mixture.
Sprinkle the dried oregano and salt over the salad.
In a small bowl or jar, whisk together the extra virgin olive oil and red wine vinegar until well combined. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
Top the salad with blocks of feta cheese on top for presentation. Let salad sit for about 10-15 minutes to allow the flavors to meld before serving.
