1 tablespoon paprika
1 1/2 teaspoon dark brown sugar
1 1/2 teaspoon finely grated orange zest
1 1/4 teaspoon salt
3/4 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper, or to taste
4 lb baby back ribs, cut into 2-rib portions
In a small bowl, stir together all ingredients except the ribs. Rub spice mixture all over the ribs. Cover with plastic wrap and refrigerate ribs for at least 2 hours or up to 12 hours.
Preheat the grill to medium heat.
Arrange the ribs on the barbeque and grill for 40 to 45 minutes, turning with tongs occasionally until meat is tender and crisp on the outside.

Very excited about visiting your new Restaruant at Cherokee NC this past weekend. The breakfast bar was great we went back for the evening dinner, Seeing you had dry rub ribs on the menu my husband ordered, I choose the hot pasta bar (which was also great - especially the wonderful gentlemen that was there). I had eaten and was on desert by the time my husband's ribs arrived - upon seeing all the water-down tomato ketchup sauce on top of the ribs, we advised her they were suppose to be DRY RUBBED. She shrudged her shoulders and said this was YOUR receipt. I am from a long line of Cheifs - Cooks and dry rubbed means dry rubbed. So I came to your website and looked at the receipt on line - I did not see sauce was added to your dry rubbed rib. I look forward to the next Paula Dean experience - just hope they get your receipts correct the next time...Thank you for letting me vent. Wonderful, delicious recipe that my husband requests often! Makes a big batch and makes the whole house smell so good when it's cooking! We eat a couple of meals from it and then freeze the rest. If you like goulash, this is a must-have recipe! Thanks Paula and Bobby! This is a definite keeper!
