Strawberry Onion Pie

Ingredients
- 1 (9-inch) baked pie crust
- salt
- freshly ground black pepper
- 2 tablespoons Dijon mustard
- 2 strawberry onions sliced
- 4 ounces grated white cheddar cheese
- 4 ounces grated yellow cheddar cheese
- fresh basil leaves, to taste
- ½ cup mayonnaise
- ⅓ cup freshly grated Parmesan cheese
Directions
Preheat the oven to 350°F.
Grill or sauté onion slices over medium heat until lightly caramelized.
Spread the inside of the pie crust with the mustard. Layer half of the onions in the crust and sprinkle with salt and pepper. Top with the Cheddar. Add fresh basil leaves. Mix together the mayonnaise and Parmesan and spread half on top of the pie. Top with remaining onions, and more mayonnaise and cheese.
Bake until bubbly, about 20 minutes. Let cool. Serve at room temperature.
