Slow Cooker Smoked Sausage and Sauerkraut Soup

Ingredients

  • 1 lb sliced smoked sausage
  • 5 cups chicken stock
  • 1 lb drained sauerkraut
  • 2 cups sliced fresh mushrooms
  • 2 large diced carrots
  • 3 stalks sliced celery
  • 3 medium diced red potatoes
  • 1 medium finely diced sweet onion
  • 1 can diced tomatoes
  • 2 teaspoons dried dill
  • 1 pinch (optional) caraway seeds
  • 6 strips cooked crisp and crumbled (optional) bacon
  • 1/3 cup finely grated (optional) Parmesan cheese

Directions

Stir together all ingredients in a slow cooker. Cover and cook on low setting for 10-12 hours or on high setting for 5-6 hours. To serve, garnish with crumbled bacon and Parmesan cheese and serve with crusty bread.
