Lighter Slow Cooker Smoked Pork, Lentil, and Sauerkraut Soup

Ingredients

  • 2 (32 oz) containers reduced-sodium chicken broth
  • 1 (16 oz) package rinsed and drained reduced-sodium sauerkraut
  • 1 (10 oz) package sliced mushrooms
  • 1 large chopped onion
  • 2 chopped carrots
  • 2 chopped celery stalks
  • 1 cup rinsed and drained lentils
  • 1 large chopped tomato
  • 3/4 lb fully-cooked, trimmed and cut into 1-inch pieces boneless smoked pork chops

Directions

Combine the broth, sauerkraut, mushrooms, onion, carrots, celery, lentils, and tomato in a 5 or 6 quart slow cooker. Cover and cook until the lentils are tender, 4 to€“ 6 hours on high or 8 to€“ 10 hours on low. Add the pork chops during the last 30 minutes of cooking time and heat through.
