Salmon Salad

  • 2 cups cooked and flaked salmon fish
  • 2 hard boiled crushed eggs
  • 1 diced red or green bell pepper
  • 1 peeled, seeded and diced cucumber
  • 1/2 cup chopped onions
  • 1/4 teaspoon optional cayenne pepper
  • 4 to 5 tablespoon or enough to moisten mayonnaise
  • 1/2 juiced lemon


In a large bowl lightly toss salmon and crushed boiled eggs. Mix bell pepper, cucumber, onions and mayonnaise together. Add seasonings. Pour over fish, squeeze lemon over dish and toss lightly. Serve over lettuce or as a sandwich.
