Root Mash Zucchini Crown

  • 1 cup diced parsnips
  • 1 cup diced turnips
  • 1 cup diced carrots
  • 1 tablespoon fresh basil
  • 1/2 teaspoon Paula Deen House Seasoning
  • 4 tablespoons Paula Deen Garden Herb Butter
  • 8 to 10 crowns zucchini


Boil vegetables 10-20 minutes (until tender) and reserve all liquid. In food processor or blender mash root veggies together with Paula Deen Garden Herb Butter and season to taste with Paula Deen House Blend Spices and fresh basil.

After all veggies are blended, make zucchini crowns, hollow them out and blanch them in reserved water. Pull out drain and fill 8-10 zucchini crowns with root mash, using a spoon or piping bag.
