- ½ cup butter
- ¼ cup unsweetened cocoa powder
- 2 cups granulated sugar
- ½ cup milk
- ⅛ teaspoon salt
- 3 cups quick-cooking oats (or old-fashioned oats for a chewier cookie) or 2 cups oats + 1 cup coconut
- ⅔ cup peanut butter
- 1 teaspoon vanilla extract
Mix butter, cocoa, sugar, milk, and salt together in a large saucepan. Boil for 1 minute, stirring constantly.
Stir in oats, peanut butter, and vanilla.
Drop by tablespoonfuls onto waxed paper. Allow to cool and harden.
