Pork & Black Bean Rice Bowl

  • leftover cooked rice
  • leftover pork butt roast
  • 1 can seasoned black beans
  • shredded lettuce
  • shredded Cheddar cheese
  • diced tomatoes
  • diced avocado, seasoned with salt and pepper
  • crushed tortilla chips
  • white queso dip
  • sour cream


In separate pots, heat the leftover pork roast and the can of black beans on the stovetop.

Microwave the rice and the queso dip in separate bowls.

To assemble, start with a layer of rice, top with black beans and then pork. Sprinkle cheddar cheese over the pork, then tomato and avocado. Add a little shredded lettuce in a ring around the bowl. Pour the queso dip over the top, add a dollop of sour cream, and finish it off with crushed tortilla chips.
