Pineapple Avocado Guacamole

Servings: Makes about 2 cups

Ingredients

  • 2 ripe avocados
  • ½ cup chopped fresh pineapple
  • 2 tablespoons finely chopped jalapeño
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon Kosher salt
  • ½ teaspoon ground black pepper
  • fresh cilantro, for garnish

Directions

In a large bowl, mash avocados until chunky; stir in pineapple and all remaining ingredients. Garnish with cilantro, if desired. Serve immediately.
