Flourless Corn Fritters

  • ears of fresh corn
  • eggs
  • salt, to taste
  • black pepper , to taste
  • bacon grease
  • sugar, to taste


Cream the corn off the cob. For every 1 cup of creamed fresh corn, mix in an egg (if early and the corn is very wet, mix in 2 eggs). Add salt & pepper to taste. Optionally, for a bit of sweetness, add sugar to taste.

Heat a skillet or griddle, and add a bit of bacon grease. Pour about ¼ cup batter for each fritter.

When one side is browned, turn it and brown the other side. Drain on paper towels; then, enjoy!
