Creamy Cinnamon Oatmeal Bake

  • 3½ cups milk
  • 1 large egg, lightly beaten
  • ⅓ cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 2 cups old-fashion rolled oats
  • 1 apple, peeled and chopped
  • ⅓ cup raisins, dried blueberries, or other dried fruit
  • ¼ cup slivered almonds


Preheat the oven to 350 degrees. Lightly grease a 9-inch square baking dish with cooking spray.

In a medium bowl, whisk together the milk, egg, maple syrup, vanilla, cinnamon, and salt. Stir in the oats, apple, and blueberries. Pour into the prepared dish and bake for 20 minutes. Top with the almonds and continue to bake until most of the liquid has been absorbed, 15 to 20 minutes more.
