Cooper’s Homemade Chicken Stock

Cook time: 2-4 hours

Servings: Makes 2 quarts

Ingredients

  • 12 chicken wings
  • 2-3 large yellow onions, diced
  • 4 carrots, diced
  • 4 ribs celery, diced
  • 8-10 peppercorns
  • 3-4 sprigs fresh thyme
  • 2-3 bay leaves

Directions

Blanch wings in boiling water for 5 minutes. Strain water out and add wings to clean stock pot.

Add remaining ingredients plus 1 gallon water. Simmer for 2-4 hours. Strain out stock and reduce.

Cool properly, and freeze, if not using right away.
