Captain Jim’s Lobster Casserole

- 1 stick unsalted butter
- 1 cup sliced mushrooms
- 1 sleve crushed saltine crackers
- 1 minced onion
- 1 cup cut into chunks asparagus
- 4 ounces drained pimento
- 1 cup frozen peas
- 8 ounces cut into chunks Velveeta
- salt and pepper
- 2 cups 1 inch pieces lobster meat
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
Preheat oven to 350 degrees.
Make a roux with flour and butter. Add 2 cups milk. Add in Velveeta. Add in vegetables and pimento. Add in lobster.
Put lobster mixture in a greased casserole dish.
In a separate pan, melt stick of butter. Add crushed crackers. Add in onion. Place over casserole dish.
Bake about 30 minutes.
