Cape Cod Lobster Roll

Ingredients
- 1 lb cooked and chilled cut into large dice lobster meat
- 1 pitted and diced mango
- 1 small diced Thai chili
- 1/4 cup chopped fresh parsley
- 1 teaspoon finely chopped fresh tarragon
- 1/4 cup mayonnaise
- 2 juiced lemons
- 1 diced shallot
- 1 stalk diced celery
- 4 hot dog buns
- 4 lettuce leaves
Directions
In a large, chilled stainless steel bowl, mix all ingredients well, making sure not to mash the lobster. Season well with salt and pepper. Line each hot dog bun with a slice of lettuce and fill evenly with the lobster salad.
