Braised Mustard Greens

- 2 lbs mustard greens
- 1/2 lb butter
- 1 medium diced onion
- 3 tablespoons minced garlic
- 1 bottle apple cider vinegar
- 4 cups brown sugar
- 1/2 lb (or 4 ham hocks) bacon
- 1 cup chicken stock
- 1 large bottle (or 3 regular beers) malt liquor
Clean and cut raw mustard greens thoroughly.
In a large pot add butter and allow to melt. Add in bacon and allow fat to render. Once bacon has rendered add in onions and allow them to sweat. Add in garlic.
Add in your mustard greens and combine with bacon butter onion mixture. Deglaze pan with apple cider vinegar and add in brown sugar. Season with salt and pepper.
Once all ingredients are combined add in malt liquor or beer and chicken stock. Cover and allow to cook for an hour.
