Bean Cake Sandwich

  • 3 cup leftover cooked (these are best cooked with a ham hock for flavor) white beans
  • enough to bind into patties flour
  • 2 to 3 tablespoons and oil, combined butter
  • 1 small sliced into rings onion
  • mayonnaise
  • white bread


In a medium bowl, coarsely mash beans with a fork and add flour until well combined. Shape bean mixture into 4 patties. Melt butter and oil in a skillet and brown patties on each side until crispy.

Spread mayonnaise on two pieces white bread. Place patty on bread and top with onions.
