Grandma Essie’s Orange Glazed Carrots

Ingredients
- 1 pound fresh carrots, peeled and cut into sticks (about 2-3 inches long)
- 1½ sticks of Butter
- 1 orange
- ¼ cup honey
- salt, to taste
- 1 tablespoon fresh thyme
- fresh parsley, for garnish
Directions
Peel the fresh carrots and cut them into uniform pieces about 1-2 inches in length for even cooling.
In a large saucepan, melt the butter over medium heat.
Once the butter is melted and bubbling, add the peeled carrot sticks to the pan. Saute for about 3-5 minutes, stirring occasionally.
Cut the orange in half and squeeze the juice into the skillet, taking care to remove any seeds. Then place the orange into the pan.
Pour in the honey and sprinkle the salt over the carrots. Stir well to combine all ingredients.
Reduce the heat to low, cover the skillet, and let the carrots braise for about 15 minutes. Stir occasionally, until the carrots are tender and glazed with the orange mixture.
Once the carrots are tender, add the fresh thyme leaves and stir to incorporate. Taste and adjust seasoning if necessary.
Transfer the glazed carrots to a serving dish and garnish with fresh parsley or carrot tops.
