Ingredients Add to grocery list

1 (2 pound) pork tenderloin
2 cups baby carrots
1 medium red onion, thickly sliced
1 cup chicken stock
1 (18 ounce) jar apricot preserves
2 tablespoons Dijon mustard
1 tablespoon fresh thyme leaves
Salt and pepper

Directions

Line the bottom of a slow cooker with carrots and onions.

Season pork tenderloin liberally with salt and pepper and place over carrots and onion slices.

In a medium mixing bowl, whisk together stock, preserves, mustard and thyme leaves. Salt and pepper to taste.

Pour glaze mixture over tenderloin. Cover and cook on low for 6 hours, or until tender.

I like this recipe but I change the apricot to raspberry instead since I don't like the other fruit. I used this because I can't open my oven door that far. It works really good and it tastes great . I had to come up with something for the holidays and that my dad would eat.

That cookie dough was offered along with many others as a school fund raiser. It was new so I bought it. WOW! The dough smells strongly of cherries and the baked cookies were a big hit at my office. However, I did not bake as long as suggested. I took them out after ten minutes and they were soft, and stayed soft. Thank you all for coming up with such a great new taste in cookie dough. hi Paula, i have put 4 pork tri tips in a slow cooker for about 6 or 7 hrs. we like pulled pork sandwiches in this house hold ,i'm going to try the recipe, it looks yummy. also where can i find that large cast iron slow cook pan that's pictured with the recipe? i think it would be great for camping ! nice to hear you were exonerated, from all those trumped up racial charges.
