1/4 cup drained, chopped pimentos
1 (2 1/4-ounce) package slivered almonds, toasted
3 cup grated sharp cheese, your choice, divided
1/4 cup dry sherry
4 cup chopped cooked chicken
1/2 cup chicken broth
1 (4-ounce) can sliced mushrooms, drained
2 (10 3/4-ounce) cans cream of mushroom soup
2 cup cooked egg noodles
Salt and pepper
Preheat oven to 350 degrees F.
In a large bowl, toss together the noodles, soup, broth, and sherry. Add the chicken, 2 cups of the cheese, the almonds, pimento, mushrooms, and salt and pepper to taste, and toss gently to combine. Transfer the mixture to a greased 13-by-9-by-2 inch casserole and top with the remaining cup of cheese.
Bake at 350 degrees F for 30 minutes, or until bubbly.

I really liked this quick to fix casserole. The almonds were a nice addition, and adding sherry deepened the flavor. Will be added to my "Favorites" list.

The Chicken Boudine Casserole is a very worthy dish! This has become a favorite in our household of 2. I normally cook for 2 and this recipe is way to BIG for just 2! I don't cut the recipe down, I use my sealermate to save what's leftover for another day. Then, I simply drop the frozen package into boiling water for a few minutes for an instant meal! I keep a good supply of this dish in the freezer! Fry up some okra, cook a pot of peas or green beans, slice a tomato and serve with some hot cornbread. LOVE IT!!

dear paula, i am in need of a receipe to feed 100 people. our church is having money trouble as so many churches are today. we are looking for way to raise money. we have done this with dinners for the past year now . althrough we are still afloat we just have to come up a new menu. i thought that you may be just what we need. a southern view. no more spagetti dinners, baked spagetti, chilli(i can't even look at it any more). we have recently had pulled pork and next time we are having chicken and broccoli. do you possibly have any ideals for us. this dinners last year had us to end up in the black. the first time in years. but if we are to keep going we have to have new ideals. i have started watching the ads and if meat is on sale -buy it. now i did not have any money to start up with, but God provides. now if i can get the meat can you tell us how to make it. any ideals will be greatly appreicated. dora

I made this for a large family gathering. Had never made it before but I figure 'in for a penny in for a pound'. Everyone loved it and scraped the casserole dish clean! Gave out the recipe at least 6 times.

This is the best Casserole I have eaten since my childhood at Grandma's house. It is so easy and the whole family loved it. I will be serving this at all the family get togethers in the future and a great meal to give to your neighbors too. You have to try this one ... it will so surprise you with the ease of prep and the taste.
