Chewy Cake

Ingredients Add to grocery list

One 1-pound package or bag light brown sugar
2 cups self-rising flour
½ cup (1 stick) butter or margarine, softened
3 eggs, beaten
1 cup sweetened flaked coconut
1 tablespoon vanilla extract
2 cups chopped pecans
1 cup semisweet chocolate chips





Preheat the oven to 350˚F.  Lightly grease a 13 by 9-inch baking pan.

In a large bowl, mix together the brown sugar, flour, butter, eggs, coconut, vanilla, pecans, and chocolate chips until well combined.  Spread the batter evenly in the prepared pan and bake for 30 to 35 minutes, until a toothpick inserted through the middle comes out clean.  Cool the cake completely in the pan before cutting it into squares.

Woke up at 9:30 this evening hungry for something. Was trying to hunt down a recipe that I had all the ingredients for and found this recipe. This recipe was so quick and easy to make and I made it in my Paula Deen 13x9 baking pan. It is DELICIOUS and hit the spot! Thank you for sharing!

To Colleen:Be sure to preheat your oven, and have an inside the oven thermometer to check that you are cooking the cake at the correct temperature. Your oven thermometer is probably off by several degrees. Doing this should solve your problem. Good Luck! Hugs to you from me..

I happened to catch Paula making this on her Food Network show...and OH the power of suggestion! I'm 37-weeks pregnant and after seeing the yummy ingredients, I had to make it! The batter was extremely sticky but I still managed to get it in the baking dish. I put it in the oven for 30 mins at 350 degrees. After 30 mins, I pierced it with a toothpick and it came out clean, so I thought it was done. WELL...after I let it cool for a while, I went back in the kitchen to taste it and a corner of the cake had collapsed which exposed a very runny cake. The top had made it look done and it had passed the toothpick test, but it sure didn't look done after seeing how runny it was underneath the top surface. So I put it back in the oven at 350 degrees for 5 mins...then another 5 mins. I took it out of the oven and it seemed a little less runny, but not totally done. At this point I figured maybe it's supposed to be a little runny so I let it cool overnight. I cut a piece this morning and it still seems too runny. It's still just DOES NOT have the same consistency I saw Paula's chewy cake have on her show. This is SO frustrating! HELP!
