Cook Time: 1 hour
Difficulty: Easy
Glaze:
1/4 cup ketchup
1 tablespoon Dijon mustard
2 teaspoons packed light brown sugar
Meatloaf:
2 pounds ground beef
1 medium onion, finely chopped
3 tablespoons ketchup
2 large eggs
1 slice white bread, torn into pieces
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
Preheat the oven to 350 degrees F.
In a small bowl, whisk together all the glaze ingredients and set aside.
In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more. Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.

My comment is this--------------- first love your show. I have watched it for years. AND I USE YOUR recipes. The real reason for this note is. My hair was so gray and so I made it very white I like it. I went to a BD party Saturday and when I walked into the room, a very nice looking Man looked at me and said " Paula Dean" I smiled and said that is quite a complement kind Sir. I just love you and the boys. I know you had a hard time raising two boys, but girl you rose out of the ashes like a Phoenix And soared higher. I believe you are still soaring and the boys are still with you. I lost my oldest son Todd last Sept. 21' 2012. He was 48 years old. Had Melanoma that went to his brain. Never married, no children. He and I were like you and your sons with a deep respect and love for each other. I' saving to buy a set of your pots. They look like a quality cookware. You look wonderful, keep up the good work and good cooking.

I never have used bread in my meatloaf and I have been making it for over 45 years. When I first made it for my husband when we first got married, I made it with oatmeal(1 cup), but now I use 1 sleeve of saltine crackers that I put in a bag and use a rolling pin until they are very fine. I read about 2 years ago that Martha Stewart makes hers that way and that it makes the best cold meatloaf sandwich, EVER! I concur. Two lbs ground chuck, 2 eggs, one finely chopped onion, 1/2 cup ketchup, 1/4 cup cream, and the sleeve of crackers. Topping: 1/3 cup of ketchup, 2 Tbsp. brown sugar and 1 Tbsp. dijon mustard. Put in loaf pan and back @350 for 1 1/2 hr. tented with foil. Pull the foil off after 45 min. and put on the topping. DELICIOUS!!!!!!!!!!!!

This is so delicious and super easy! I literally put it together and into the oven in about 10 minutes. I added a few things into the meatloaf mixture... - About 4 cloves of fresh garlic - 1/3 cup milk (instead of the ketchup) - a pinch of parsley - a pinch of garlic powder - pinch of onion powder Kept the glaze as is and the hubby loves it. My picky toddler will even give it a try!

This recipe is easy and delicious! We particularly like the glaze on top of the meatloaf. For some reason I never seem to have sliced bread when I'm making meatloaf so I've substituted croutons (about 1 cup) for the slice of bread, and it's been delicious still. Thanks!

dear mrs paula i really love your show ,ilove to cook but i can not make a meatloaf thatdont come out dry, my husband is diabetic what is good sauce for outside of meatloaf,he dont like brownsugar,keep up goodwork. hey you want a good laugh, i am 46. i will be 47 december 21 last year i cooked a turkey .i forgot the stuff inside of the turkey,iwent to baste the bird and seen the little white bag sticking out.luckly no one else saw it. i think you are a great cook.if i could afford it i would buy one of your stew pots.hey mrs,paula here is a good recipe for deer stew fry 8 strips of fatback take greese off of fatback fry 4 large onions til clear remove onions brown deer meat add salt and pepper&soul; food season,slow cook for 2 hours or untiltender then add texas pete 1 teaspoon ketchup there are a lot of people out there that love deer.me ilove my pintos blackeyed peas.GOD BLESS YOU AND YOURS MRS PAULA.patricia haithcock.
