Ingredients

  • 1 tablespoon vegetable oil
  • 6 medium yellow squash, thinly sliced
  • 1 large Vidalia onion, thinly sliced
  • 1 tablespoon butter
  • 1/2 cup Parmesan cheese, grated
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1 sleeve buttery crackers, crushed medium to fine

Preparation

Preheat the oven to 350°. Grease a 2-quart casserole dish.

 

Heat the oil in a large skillet over medium heat. Sauté the squash, onion, and butter until soft. Transfer to a bowl and stir in the Parmesan, cheddar and sour cream. Add salt and pepper, to taste.

 

Place in the prepared casserole dish and sprinkle the cracker crumbs evenly over the top. Bake for 20 minutes or until the top is golden and bubbly.

This has become

This has become a holiday favorite at our house! It will be on our Thanksgiving and Christmas tables again this year. I make a double batch (depending on number of guests) at Thanksgiving and separate it into two casserole trays prior to adding the topping and baking. Then I bake one on Turkey Day and freeze the other for Christmas. It freezes great! I take it out the day before Christmas and defrost it in the refrigerator, then add the topping and bake it on Christmas Day. Voila! Perfection!
We sort of combined Paula's regular Squash Casserole recipe and this one by using both zucchini and yellow squash. The only differences between the two recipes are that the regular uses both zucchini and squash and Paula's house seasoning, while this one uses just squash, s&p, and adds parmesean. We love the combo of the zucchini and squash with parmesean added, but that is just a family preference.
Every time I make this I get compliments galore and I direct people to Paula's recipe. This will be a traditional holiday side dish for our family. Thank you Paula!

Yum, yum, yum, y

Yum, yum, yum, yum, yum!!! First time I made it I followed the recipe EXACTLY... Then I started adding more cheese, and today (4th time) I used zucchini (because that's what I got for free from a friend). Absolutely delicious! My honeyman thinks it's great!

Love this! It was a little difficult to cook all 6 sliced squashes in my iron skillet, make sure to use a BIG skillet.
