White Chocolate Oatmeal Cherry Cookie

Servings: Makes 50 cookies
Ingredients
- 2 cups sweetened dried cherries
- 2 cups boiling water
- 1 cup salted butter, softened
- 2 cups packed light brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon Kosher salt
- 1½ cups old-fashioned oats
- 2 (4-ounce) white chocolate, chopped
- Ghiradelli white chocolate melting wafers, melted, for garnish
Directions
Combine the cherries and boiling water. Let stand for 10 minutes, drain well.
In a large bowl, beat butter, brown sugar, and vanilla on medium speed until fluffy, 4 to 5 minutes. Scrape sides of bowl as you go. Add eggs and beat well.
In a bowl, whisk together flour, baking powder, baking soda, salt, and oatmeal. Gradually add dry ingredients to the butter mixture, beating until combined. Stir in cherries and chopped white chocolate.
Cover and refrigerate for 1 hour.
Preheat oven to 350˚F.
Using a cookie scoop, scoop dough and place 2 inches apart on a prepared pan.
Bake for 12 minutes, or until lightly golden brown. Let cool for 5 minutes, then remove to a wire rack. After cooled lightly garnish with melted white chocolate.
