The Lady & Sons Grits Pie

Ingredients

Cornflake Crust

  • 8 cups unsweetened cornflakes, ground
  • ¾ cup sugar
  • ¼ teaspoon Salt
  • 1½ sticks Butter, melted

The Lady & Sons Grits Pie

  • 1 cup buttermilk
  • 6 large eggs, lightly beaten
  • 6 tablespoons All-purpose flour
  • 2 cups sugar
  • 3 sticks Butter
  • 2 cups quick-cooking grits
  • ¾ teaspoon Salt
  • 4 cups water
  • 1 tablespoon vanilla extract

Directions

Cornflake Crust

Preheat oven to 325˚F.

Combine the cornflakes, sugar, butter, and salt and press firmly into a 9” spring form pan. Bake for 8 to 10 minutes until brown.

The Lady & Sons Grits Pie

In a small saucepan, bring water and salt to a boil. Add grits and cook for 4 minutes, stirring constantly. Add butter and cook for an additional minute. Set aside and cool slightly.

In a small bowl, stir together sugar, flour eggs, buttermilk and vanilla. Stir into cooked grits. Pour into crust and bake for 35-40 minutes, or until set. Serve warm or cold with whipped cream and strawberries as a garnish, if desired.
