Paula’s French Apple Custard

  • 2/3 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 cup apple juice
  • 1 zested (2 tablespoons zest) lemon
  • 1 tablespoon lemon juice
  • 1 juiced orange
  • 1 1/2 cups divided heavy cream
  • 1/4 cup confectioner's sugar
  • 1 egg yolk
  • 3 tablespoons butter


In a medium saucepot, mix together sugar and cornstarch. Slowly whisk in apple juice, lemon zest, lemon juice and orange juice, then simmer on medium heat until thickened, about 5 minutes.

Temper the egg yolk with the warm sauce, then add to sauce. Add butter. Let cool.

Whip the heavy cream and 1/4 cup confectioner’s sugar to stiff peaks. Fold into cold custard. Place in a bowl on a beautiful platter of fruit.
