Paula’s Creamed Corn

Ingredients

  • 1 tablespoon butter
  • 1 cup chopped onion
  • 1 tablespoon minced garlic
  • 1 (16-ounce) package frozen corn, thawed
  • 2 cups heavy whipping cream
  • ½ teaspoon salt
  • ¼ teaspoon ground white pepper
  • ¼ teaspoon ground red pepper
  • 1½ tablespoons quick-cooking grits (not instant)
  • 1 cup shredded Monterey Jack cheese

Directions

In a large saucepan, melt butter over medium heat. Add onion and garlic; cook, stirring occasionally, until onion is tender, about 4 minutes. Stir in corn, cream, salt, white pepper, and red pepper, and bring to a boil. Reduce heat, stir in grits and simmer until thickened, 10 to 15 minutes. Stir in cheese until melted. Serve immediately.
