Lime Salad

Ingredients
- 1 (12-ounce) tub cottage cheese
- 1 package lime-flavored gelatin
- 1 (20-ounce) can crushed pineapple, drained slightly
- 1 (8-ounce) tub frozen whipped topping, thawed
- 1 cup chopped pecans
Directions
Mix cottage cheese and gelatin and stir well. Fold in pineapple, frozen whipped topping, and pecans. Chill until thickened.
Variation: Use orange gelatin and fold in a can of drained mandarin oranges along with pineapple. Recipe works beautifully with low-fat cottage cheese, light frozen whipped topping, and sugar-free gelatin.
