Ginger Dusted Sautéed Salmon With Sweet Citrus Sauce

Ingredients

  • 6 oz salmon fillet
  • 1 1/2 teaspoons powdered ginger
  • 1/4 teaspoon Paula Deen House Seasoning
  • 2 tablespoons olive oil
  • 1/4 cup sherry
  • 3 oz shrimp stock
  • 1/4 cup heavy cream
  • 1/4 cup white wine
  • 1/4 lemon
  • 3 tablespoons Paula Deen Sweet Citrus Finishing Butter

Directions

Clean salmon fillet, pat dry. Dust with powdered ginger then lightly dust with house seasoning. Heat skillet and add olive oil. Sauté for 2 minutes on each side and place in oven at 250 °F to keep warm.

Degrease sauce pan then deglaze with white wine, add heavy cream reduce by half then add shrimp stock and bring to a boil. Add juice of 1/4 lemon then melt in butter. Serve sauce over fish.
