Easy Italian Dressing

  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons white vinegar
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried basil
  • 1 pinch oregano
  • 2 cloves garlic, minced
  • salt, to taste
  • freshly ground black pepper, to taste


In a small mixing bowl, whisk together vinegar, parsley, lemon juice, basil, oregano and garlic. Add olive oil in a steady stream while whisking. Salt and pepper to taste. Serve immediately over fresh greens. Makes 1/2 cup.
