DeeDee’s Coffee Cake

Cook time: 30 to 35 minutes
Servings: 8 to 12
- 1 cup brown sugar
- ½ cup granulated white sugar, plus more for topping
- 1½ sticks butter, melted
- 2 eggs
- 1 to 2 teaspoons vanilla
- 1½ cups all-purpose flour
- 1 teaspoon cinnamon, or more to taste
- pinch of salt
- ½ cup chopped pecans, optional
- ½ cup raisins, optional
Preheat oven to 350˚F.
Add wet ingredients to a mixing bowl and mix by hand with a wooden spoon or rubber spatula.
Add dry ingredients to wet ingredients and mix well by hand.
Pour into a 9” cake pan sprayed with baking spray. Bake 30 to 35 minutes or until brown on top. The center should be softer than the edges.
Let it cool and sprinkle a generous amount of granulated sugar on top. Enjoy!
