Crab Stuffed Flounder Filet

Ingredients

  • 4 flounder fillets
  • 1 (8 oz) package softened cream cheese
  • 3 tablespoons softened butter
  • 1 clove minced garlic
  • 1 diced jalapeño
  • 8 sliced bacon
  • 1 pinch to taste salt
  • 1 pinch to taste pepper
  • 2 crab claws

Directions

Preheat oven to 400 °F. Preheat a cast iron skillet over medium heat. Crack crab claws, pick shells out of meat and dry with paper towels.

In a medium bowl add cream cheese, butter, garlic, crab and jalapeño, mix well.

Spoon 1/4 of the cream cheese mixture onto each flounder filet and roll.

Wrap each rolled filet with 2 pieces of bacon and secure with toothpicks. Add fish to preheated cast iron skillet, and place in a 400 °F oven for 8-10 minutes or until golden and cooked through.
