Chicken & Rice Casserole

  • 4 boneless chicken breasts
  • salt, to taste
  • black pepper , to taste
  • 1 cup long grain white rice, uncooked
  • 1 (2-ounce) package onion soup mix
  • 1 (10-ounce) can cream of mushroom soup, condensed
  • 1½ cups water


Preheat oven to 325˚F. Spray a 9×13-inch baking dish with nonstick spray.

Arrange chicken breasts in baking dish and sprinkle with salt and pepper.

Spread uncooked rice over chicken. Sprinkle with onion soup mix.

Combine mushroom soup and water and pour over chicken.

Cover and bake for 1 hour and 15 minutes or until rice is tender.
