Paula’s chicken and rice casserole recipe is a perfect quick weeknight dinner for the family. Serve it with a salad for a supper even the kids will love.

Cook time: 75 minutes

Servings: 4

Ingredients

  • 4 boneless chicken breasts
  • salt, to taste
  • Black pepper , to taste
  • 1 cup long grain white rice, uncooked
  • 1 (2-ounce) package French onion soup mix
  • 1 (10-ounce) can cream of mushroom soup, condensed
  • 1½ cups water

Directions

Preheat oven to 325˚F. Spray a 9×13-inch baking dish with nonstick spray.

Arrange chicken breasts in baking dish and sprinkle with salt and pepper.

Spread uncooked rice over chicken. Sprinkle with onion soup mix.

Combine mushroom soup and water and pour over chicken.

Cover and bake for 1 hour and 15 minutes or until rice is tender.
