BCR Cookies, AKA Bacon, Chocolate & Rum Cookies

  • ½ cup butter, melted and cooled
  • 1 cup packed brown sugar
  • ½ cup white sugar
  • 1 whole egg
  • 1 egg yolk
  • ¼ cup rum
  • 2¼ cups flour
  • ½ teaspoon baking soda
  • 2 cups chocolate chips
  • 8 slices bacon, cooked crisp and finely chopped


Preheat oven to 325˚F and line baking sheets with parchment paper. In large bowl, whisk together melted butter, brown sugar, and white sugar. Add in egg, egg yolk, and rum. Add flour and sprinkle baking soda over flour. Stir until just combined. Fold in chocolate chips and bacon. Using a medium scoop, drop rounded cookie dough onto baking sheets. Bake for 10-12 minutes or until edges are lightly browned.
