Memorial Day Macaron Cake

Ingredients

  • 27 well-chilled red, white, and blue macarons (all the same size, equally filled)
  • melted white chocolate in a piping bag
  • buttercream frosting in a piping bag
  • patriotic bows , for garnish
  • edible shimmer spray, for garnish
  • sprinkles, for garnish
  • edible flowers, for garnish

Directions

The macaron cake will be assembled as a cube. To start place three small dollops of buttercream in a straight line approximately 2-3 inches apart towards the front of a 10″ cake drum in straight line.

Place your macarons one at a time on top of each dollop, with outer 2 facing front, and middle on the side.

Make sure they can stand without assistance before proceeding.

The middle row, you will do the same, except you will alternate the placement of the macarons, with the outer two turned sideways and the middle facing front. As you assemble your rows, make sure that each macaron is touching the ones beside it and the ones behind it.

Use your melted chocolate to secure each macaron to the one beside it and behind it by squeezing a small amount in between each macaron. For your third row, you will repeat the first row pattern, securing as you go. This is the first layer of your cube.

To start the second layer, you are going to squeeze a small amount of buttercream in the center of the top of each macaron in the first layer. Then, you will alternate placement from preceding layer, i.e. on top of each front facing macaron, you will now put a side facing macaron, and vice versa. Secure with melted chocolate as in first layer.

Repeat process with buttercream on top of second layer macarons, alternating again with third layer and securing with melted chocolate. This will complete the assembly process.

If any macarons do not feel completely secure, add small amounts of buttercream and/or melted chocolate to finish securing.

At this point you can put the entire celebration cake in the fridge if you’re not serving right away. If you do plan to serve right away, go ahead and add your decorations using melted chocolate or buttercream as adhesive.

Place on serving stand approximately thirty minutes prior to serving.
