Ingredients

  • 1 lb dried navy beans
  • 6 cups chicken stock
  • 4 tablespoons butter
  • 1 tablespoon garlic, minced
  • 3/4 cup onion, diced
  • 1 jar green chilies, chopped
  • 1 lb Springer Mountain Farms chicken, boneless, skinless, finely chopped
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons black pepper
  • 1/2 bunch fresh cilantro
  • cornbread, for serving
  • Paula Deen Hot Sauce, for serving
  • grated cheese, of your choice, for serving
  • sour cream, for serving

Preparation

Step 1

Wash beans, cover with water and soak for overnight. Drain.

Step 2

Place beans in a large pot with chicken stock. Bring to a boil. Meanwhile, in a saucepan, heat butter and sauté garlic, onion, chicken, salt and pepper for 5 minutes. Add cumin, oregano and jar of green chilies.

Step 3

Add chicken and vegetable mixture to beans and chicken stock, and stir to combine. Bring to a boil, then, lower heat to medium, cover, and cook, stirring occasionally, for 2 - 2 1/2 hours.

Step 4

Garnish with fresh cilantro. Serve with cornbread, hot sauce, grated cheese and sour cream.

i made this and

i made this and i really love it, but.... i did make some changes. You can use 4 cans of navy beans which is equivalent to the 1lb bag. Just rinse off the beans in the can. I also buy canned chicken broth instead of chicken stock, i use about 3 1/2 to 4 cans. Last major change is i use already cooked rotisserie chicken from the store, just makes it easier and is usually cheaper then buying raw chicken.
You start the directions with bringing the canned beans and broth to a boil in a large pot then add the saucepan items to the pot Add chicken and spices and cook for about 1 hour to bring the flavors together. You dont need to cook for 2 1/2 hours as suggested because the chicken is already cooked and the beans will warm up during the hour. This is a very good recipe and i really love it. P.s. I use one can of the little diced Green chilies in the spanish section of the store
