6 large eggs, hard-boiled and peeled
1/4 cup mayonnaise
3 slices bacon, cooked and crumbled plus more for garnish, if desired
2 cherry tomatoes, seeded and finely chopped
1 tablespoon dried parsley flakes
Salt and freshly ground black pepper
Halve the eggs lengthwise. Remove the yolks and add them to a medium bowl. Mash the yolks with a fork and stir in the mayonnaise, bacon, tomatoes, and parsley. Add salt and pepper, to taste, and blend well.
Fill the egg whites evenly with the yolk mixture and garnish with bacon, if desired. Arrange them in a container and store, covered, in the refrigerator until ready to serve.

I made the BLT Eggs FOR OUR easter dinner in the park, I made over a 100 of them, they went over like a THERE WAS NO TOMMORROW!! everyone loved them & wanted to know who gave me this fabulous recipe.? i told go watch youre t.v & turn it on ch 110 until you see PAULA DEAN. Great Festive Appetizer! Made these for a Christmas Party and they were a hit! Topped each egg with a piece of chopped tomato and sprinkled them with parsley to give them a Christmas touch! Great way to change up an old favorite.

These eggs are great! I add minced scallions to the recipe and usually up the basic ingredients. I'm constantly asked to make them for different gatherings and they are always gone. People constantly ask what is in them. Thanks for the recipe.
