Baked Acorn Squash with Brown Sugar and Butter Baked Acorn Squash with Brown Sugar and Butter


Servings: 2 servings
Cook Time: 1 hour
Difficulty: Easy

Ingredients Add to grocery list

1 acorn squash, cut in 1/2
2 tablespoons brown sugar
2 tablespoons butter, softened
2 tablespoons maple syrup
Salt
Freshly ground black pepper

Directions

Preheat oven to 400 degrees F.

Scoop the seeds and stringy pulp out of the squash cavities and discard. In a small mixing bowl, combine the brown sugar, butter, syrup and salt and pepper, to taste. Rub the squash cavities and cut sides of the squash with the butter mixture and place them on a baking sheet, cut side up. Bake in the preheated oven for about 1 hour until the squash is tender when pierced with a fork. Serve 1 half per person.

I love acorn squash. Always cooked for half hour cut side down and then turned over to cook last half hour. I add butter, brown sugar and cinnamon. Very good. I will try your recipe, as it sounds simpler. Unsure if will add maple syrup.

An even easier way! Prepare as before, don't heat the oven! Place cut side down in a covered microwave dish both halves, microwave on high 6 min. Remove, flip halves cut side up and spoon same mixture in hollows and cover again. Microwave on high for 6 more minutes - done! Scoop out of skins into dish and enjoy!
