Servings: 1 (9x5 inch) loaf
Difficulty: Easy
1 pound ground chuck
10 slices bacon, cooked and crumbled
1 (8-ounce) package sharp Cheddar, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1 (3-ounce) can French fried onions
Preheat oven to 350 degrees F.
In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.
In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.
Press meat mixture into a 9x5x3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake 10 to 15 minutes, or until meat is no longer pink.

We've been looking for a meatloaf recipe that we can all enjoy--and this may be it. It was flavorful without being obnoxious and it had the world's most perfect food: bacon. I cooked at 375 due to a tricky oven and it was perfectly cooked. The French fried onions were a great addition.

If you want to add a little to this recipe (but warning it will be more unhealthy), here's some changes I made: 1. Added a lot more shredded cheese (4-8 oz. more) 2. Instead of using 1/4 cup bread crumbs, I took 1/4 cup white bread and dampened it in water and then mashed it in. 3. Wrapped raw bacon around meatloaf before cooking. 4. Mixed a little brown sugar and soy and worcestershire sauce in with the ketchup/mustard mix to baste bacon. 5. After 40 mins, I basted with sauce again. 6. Finished after about 60 mins total. 7. Let it sit for 20 mins instead of 10 so it would slice more easily.

My entire family LOVES this recipe, even the non-meatloaf loving teenage nephews! I usually go light on the salt, heavy on the pepper, and I add grated carrots, chopped onion and bell pepper, and a lil bit of corn to give some color and to also sneak those vegies in!! The french fried onions really help tie it all together! Thanks Paula for making me the Queen Of My Kitchen!!!

"Mickey liked it!" In other words, my picky boyfriend loved it- even though he's not a big cheese guy. He said the bacon rounded out the flavor and that this recipe is a keeper. My only complaint is that the loaf fell apart a bit. I used the 'cooking the loaf on a bed of bread in a larger baking dish' technique. I also added a tablespoon of hickory smoke bbq sauce to the ketchup mix. Radical.

I was actually quite disappointed in this recipe. I want to stress to everyone that you need to use your meat thermometer!!! I followed the directions for this exactly--and when I took it out of the oven after the initial 40 mins and the addt'l 15 minutes, it was only at 112 degrees and nearly falling apart, like others have commented. It didn't have any pink in the middle but it probably falling apart because it wasn't cooked enough. I had to cook it for another 55 minutes before it was at the recommended temp of 160. When it was done--it was like a meatloaf--not falling apart. I liked the taste of it for the most part--but it was way too salty. I would suggest that you not add the salt to the recipe. Based on taste, I would probably give this a 4, but because the recipe is off by an hour of cooking time, it gets a 2.

Made this last night and it was awesome! Rave reviews from everyone. I made some minor changes to cut the fat and calories by using turkey bacon cooked until crispy and light mayonnaise. I doubled the recipe, made one in a loaf pan and the other shaped in a roasting pan. The loaf pan was too moist, so I will do it in a roasting pan next time. Thanks for this recipe!
