Prep time: 20 minutes

Cook time: 20 minutes

Servings: 4

  • 2 cups cooked rice
  • 1 egg
  • 1/2 can sweetened condensed milk
  • 1/4 cup raisins
  • 1/2 stick butter, melted
  • 2 tablespoons vanilla
  • 1 1/2 teaspoons cinnamon
  • Dash nutmeg
  • Turbinado sugar, to sprinkle on top

Preheat oven to 325 degrees.

Put cooked rice in bowl.

Add 1 egg to a small bowl, and add a small amount of condensed milk to egg along with a small amount of cooked rice (tempering). Once mixed together, add egg and condensed milk mixture to the large bowl of rice along with the remainder of the 1/2 can of sweetened condesned milk. Add melted butter to the mixture and stir. Add in raisins, vanilla, cinnamon and nutmeg.

Add rice mixture to a greased baking pan or small greased oven-safe ramekins. Sprinkle the tops with the turbinado sugar.

Bake until thickened and set, around 20-25 minutes.
